If I do a partial batch in a big fermenter, is that a problem ("too much oxygen", etc.)???

Answer: You can safely use larger fermenters for smaller batches. The
CO2 produced during primary fermentation will remain on the top of the beer
and protect it from oxidation for an extended period. Knowing that C02
is heavier than air (O2), the CO2 will set in place nicely if you keep the Lid on
the unit.
